Abbaye des Rocs Grand Cru has a rich, complex fruit aroma of cherries, golden raisins, peaches, and assorted dried fruit, laced with honey and caramel. Smooth, rich flavors reminiscent of cherries dipped in caramel, finishing with notes of dried chocolate, roasted almonds, and a hint of molasses.
Its subtle smokiness without using smoke malt makes "Helles Schlenkerla Lager" a unique representative of the classic lager beer style "Bavarian Helles". "Schlenkerla Helles" is brewed with fine Bavarian aroma hops from the area around the city of Nürnberg. It's lagered in century old caves underneath the historic Schlenkerla brewery and maltings. Schlenkerla Helles is boiled in the same copper kettles and bottom fermented by the same yeast as the historic Schlenkerla Smokebeer. Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries. Boon Framboise has an alcohol volume of 5%. Drink it when it is young.

In 2012 we have found another year's harvest really worth celebrating and brewed a phenomenal Harvest Ale. To look at, the beer is slightly darker than JW Lees Bitter and lighter than some previous vintages, with flavours of toffee and sherry. But as with all JW Lees Harvest Ale, these flavours will develop in the bottle as the beer ages. In 1986 Giles Dennis, Head Brewer at the time, invented JW Lees Harvest Ale. Harvest Ale is a vintage barley wine made from the first hops of the year and the very finest British malt. Very quickly the beer created a following of ale enthusiasts who recognised its quality. In the past 26 years, whilst retaining a cult following, the beer has grown in popularity and in some bars around the world it has gained legendary status, with older vintages being highly sought after and changing hands for up to $60 per bottle.

Lagunitas Hop Stoopid Ale, Double IPA 8.0% ABV Petaluma, CA
The beer with a guarantee built right into the name, this one is destined to blast through the flavors from the night before. "Clean this mess up or else we'll all end up in jail…those test tubes and the scale…just get 'em all outta here…" He was referring to the complex super-critical-CO2 hop extraction equipment set up on the table in the lab across from the brewhouse. Hop extracts are for the BIG brewers, he thought – suitable only for crummy sub-standard and barely-passable industrial lagers, not the subtle and elegant craft beer made here. But wrong he was. The New Brewer does not eschew any possible inputs. In this case the mountain of extracts will replace the mountain of hop vegetative material in the kettle thus creating cleaner hop flavors and preventing the otherwise spinach-like mess of a kettle full of super-hopped wort from clogging up a pump or worse. The sensuous honey-like amber ooze was administered intravenously to the wort kettle and the sacrament was complete. Another kettle of Hop Stoopid is once again raised up and fermented on high.

Aventinus, the Wheat Doppelbock of Bavaria, has always been known to be the most intense and complex wheat beer in the world. This was the case for the past sixty years, but not anymore… Up until the 1940's, Aventinus was shipped all over Bavaria in containers lacking temperature control. Consequently, the precious drink partially froze during transportation. Unaware that the brew was concentrated by the separation of water from the liquid. People were baffled by this unique version of Aventinus. By chance, the first Aventinus Eisbock was created. Well aware of this story, Hans Peter Drexler, brewmaster of the Schneider brewery, decided to recreate this classic "mistake" in a modern controlled facility. The Scotch Malt Whisky Society, founded in Edinburgh in 1983, is a membership organization which bottles & sells single cask, single malt whisky. It purchases individual casks from more than 120 malt whisky distilleries in Scotland & throughout the world, bottles them & retails directly to its members. An odd thing about the Society bottle is that they do not mention the distillery – or not in so many words. A number rather than a name denotes each distillery. This is because the curious nature of single cask, single malt whisky means the tastes are often not characteristic of the region it comes from. Can you guess the distillery? Need help? We can give you a hint or two… Each Society bottling is unique & produced in a limited number, making each bottling incredibly rare—once drunk the bottle is gone forever. Cask No.1.176 "Zesty Ginger-Lime Cooler"
Age: 16yrs; ABV: 55.4%; Barrel: Ex Bourbon Barrel. Tasting Notes: On the nose are fresh green saplings, apricots and peaches followed by old fashioned rose water perfume. The taste neat had flavors of Weetabix cereal, red apples and a freshness redolent of this beauty's name. With a few drops of water, it's like preparing a fruit punch and enjoying a minty grapefruit sorbet.

Cask No. 4.203 "Romantic Tales, Songs and Whispers"
Age: 15yrs; ABV: 55.8%; Barrel: Ex Bourbon Barrel. Tasting Notes: The nose has dried flowers and French linens, honey, marshmallows and spun sugar—tobacco tins, cricket bats and embers appear with water. The palate finds golden syrup, chocolate limes, after dinner mints, coconut, ginger, pencil shavings, various nuts and licorice. There is a little bit of everything for everyone!

Cask No. 3.226 "Cigar smoke and Newhaven Fish Boxes"
Age: 16yr; ABV: 58.3%; Barrel: Ex Sherry Cask. Tasting Notes: An herbal, salty and mineral nose with whiffs of bonfire, heather, parma violets, medicinal bandages and nutty smoke. The neat palate is huge and powerful with dramatic flavors of Newhaven fish boxes, iodine and scallop shells as well as cigar smoke, leather furniture and ash.

Age: 21yrs; ABV: 58.3%; Barrel: Refill Ex Sherry Butt. Tasting Notes: The nose provides appeal from sherry-soaked Christmas cake, balsamic-glazed pears, toffee, tobacco and smoke, evocative of old sailing ships. The palate has cinnamon, nutmeg, iced gingerbread, toffee apples, sweet sherry, honey glazed ribs, wood, leather and ash!

Age: 8yrs; ABV: 595%; Barrel: Ex Bourbon Barrel. Tasting Notes: The nose is attractively perfumed and sinfully seductive—floral notes, cereals, vanilla custard and fresh, clean fruits. The palate has iced donuts, dried fruits, lemon sorbet, pears and blossoms but also a subtle woody spice and salty leather. Just plain lovely.

Age: 9yrs; ABV: 57.3%; Barrel: Ex Bourbon Barrel. Tasting Notes: This treat has nose reminiscent of a picnic scene laden with apple tart, buttery pastry and orange scented Madeleines. Waxy honey, calvados and hazelnut syrup lead into a beautiful palate chalk full of coconut, marzipan and watermelon. Wild strawberries in thick vanilla custard and pear compote with Armagnac finish it off. Hungry yet?

Age: 25yrs; ABV: 51.6%; Barrel: Ex Bourbon Barrel. Tasting Notes: A stunning nose with baked stone fruits, rosewater and pistachio, fresh pine and beeswax polish. Cooling lychee and cucumber, breezy jasmine round out the nose and lead into a palate replete with fresh kiwi, gooseberry and wet slate. Crisp green apple, lime pastilles, fresh laundry and mint round out this beauty. An overall lovely dram!

Tasting Notes: The nose displays an enigmatic duality: tropical fruits (mango, kiwi, lemon) and honey conceal deeper notes of tar, peppercorns, pistachios and light smoke. The palate has powerful peppery heat , clove, menthol and sage accompanied by waxed fruits, heather honey and crème brulee. Simply delicious.

The palate marries the sweetness of lemon bonbons, honey, butterscotch and vanilla with mild savory smoke, malty flavors, heather and herb.

Overseas Casks
FH Glenfarclas "Ferd in the Spey" 2 nd Edition" (Speyside, Scotland)
Specs: Single Cask # 1065, Special Release 2005, 2nd Fill Sherry, Non-Chill Filtered; Age: 10yrs 6mos ABV: 46.0%. Tasting Notes: Every bit as lovely as our first award winning cask of this Speyside stunner! The nose, redolent of apple pie, opens to candied-sherried fruits, nutmeg, clove, caramelized oranges and graham crackers. On the palate, this medium bodied and silky dram gives off cinnamon coated caramelized apples, dates, raisins and touches of chocolate. Apricot squares and hints of orange peel play nicely together. The short to medium finish is very pleasant with the ever-present sherry giving off some baking spices reminiscent of gum drop clad gingerbread houses. After a few minutes, we noted a dry, almost salty sensation that had us going in for more. Suggested neat with a few drops of water.
Specs: Single Cask, 1st Fill Sherry, Non-Chill Filtered; Age: 5yrs 6mos; ABV: 57.4%. Tasting Notes: So named as it was selected from a group of Whisky enthusiasts in our Barrel Room, this cask is exceedingly rare & shows how exceedingly complex a young Islay Malt can be when married w/ Sherry. Whiffs of smoke race up to greet you with malted barley/hay, toffee, honey & sherried fruits. Careful…the peat smoke & sherry work very well to mask the alcohol on this monster. Smoke lingers throughout over some barnyard haystacks, figs, fruitcake & holiday spices. Neat w/ water to taste.

FH English Whisky Co. Peated (Norfolk, England)
Specs: Vatting Casks 108,166, Non-Chill Filtered; Age: 4yrs 7mos; ABV: 46.0%. Tasting Notes: Nose is filled with sweet biscuits, ginger, white pepper and subdued smoke. Clean at first with the sweet malt showing. Then the peat rises throughout the palate as expected with pepper, sweet, creamy chocolate cereals and citrus flavors. The finish is relatively clean and lingers with a complexity that belies this Whisky's age. Neat on its own or with a touch of water.

FH Arran 10yr Single Cask (Isle of Arran, Scotland)
Specs: Single Cask, 2nd Fill Bourbon, Non-Chill Filtered; Age: 10yrs; ABV: 50%. Tasting Notes: Ten years in a bourbon barrel has given this rich island malt a ton of character! Bright tropical fruits greet the nose and are quickly followed by fresh pear, oak spice and lemony pine. The robust palate is nutty, slightly grassy and follows the nose displaying pops of fresh fruit and forest floor. The lingering finish is chalk full of vanillans, Belgian chocolate, apricot schnapps and a slight briny character. Neat on its own or with a touch of water.

FH Old Weller Antique II (KY)
Specs: Single Barrel; ABV: 53.5%. Tasting Notes: Caramel, vanilla, juicy red fruits, floral pops and hazelnuts dominate the nose of our second cask of this wheated beauty. The palate is all about dusty cinnamon red hots, oak spice and dried corn husks. The mouthfeel is medium bodied with big punches of caramel and lingering candied sweetness rounding out the finish. So. Good. Works best as a sipper shot or over ice.

FH Buffalo Trace 2016 (KY)
Specs: Single Barrel; ABV: 45.0%. Tasting Notes: Our fourth knockout bottling of Buffalo Trace! The nose greets you with dusty shelled peanuts, orange flower water, spearmint, vanilla bean and great pops of baker's chocolate. The palate is creamy and round with distinct notes of vanilla cupcakes, a dominant oak spice with herbaceous pops and strong hints of red fruit. Works best as a sipper shot or over ice.

FH Four Roses III Barrel Strength (KY)
Specs: Single Barrel, OESQ; Age: 10yrs 10mos ABV: 55.0%. Tasting Notes: We choose floral yeasts when choosing Four Roses and look for Barrels showing some tropical fruit. The perfumy esters greet the nose on this barrel with a hint of banana, toffee and baking spice. Apple pie filling mixes toasted pecans, dark cherry and vanilla, fading into a smoky cinnamon-banana-creamsicle. Water or two cubes.

Specs: Single Barrel #N30-13-0345; ABV: 62.6%. Tasting Notes: From our friends down south, this specially selected single barrel uses three different smokes to produce a distinct flavor. Peat and smoke at the fore is balanced by sweetness and vanilla. Its buttery broad flavor and a long finish make for a memorable dram. Neat w/ water to taste.
FH FEW Single Malt (IL)

Specs: Single Barrel; ABV: 46.5%. Tasting Notes: Only six cases of this collaboration were produced and prove that good things come in small packages! This lovely American Single Malt was made from 100% Wisconsin barley and boasts a ton of deep cereal notes and a soft round mouthfeel.
FH Knob Creek (KY)
Specs: Single Barrel; Age: 12yrs, 9mos ABV: 60.0%. Tasting Notes: For our first selection of Knob Creek we found an older cask that displayed huge flavors. The nose is all about orange dreamsicles, a strong oak presence, malted milk and vanilla, vanilla, vanilla! The palate pops with ripe juicy red fruits like cherry and cranberry but also shows a lot of winter spices and anise. The finish is gentle and sweet despite it's strength with hints of sweet raisins and circus peanuts. Neat w/ water to taste.

FH Jim Beam Single Barrel (KY)
Specs: Single Barrel; Age: 6yrs, 5mos; ABV: 47.5%. Tasting Notes: For our first barrel of this classic bourbon, we chose a cherry forward cask that exhibited notes of burnt orange peel, cinnamon and plenty of vanilla. Reminiscent of an Old Fashioned in a glass and meant to be mixed or enjoyed straight, this lovely bourbon is sure to please!

FH Dickle Barrel Select (TN)
Specs: Single Barrel; Age: 11yrs; ABV: 51.5% Tasting Notes: For our first selection of this Tennessee belle we chose a cask that exhibited all the best of it's style. Milled corn husks, hints of tropical fruits, caramel, dusty wood and plenty of buttered popcorn greet the nose while the round mouthfeel gives way to a palate that is redolent with red and dark berries, an underlying sweetness and hints of barnyard hay. The finish is pleasing with hints of pickle brine and whiffs of smoke. It's just plain good!

Sherry
A fortified wine originally made in & around the town of Jerez in the Andalusian region of southern Spain. It's now also made in the United States & other parts of the world such as Australia & South Africa. The Spanish are the acknowledged experts, using the solera system of topping off older wines w/ the more recently made sherry. Thus there are no vintage sherries & the quality is consistent year after year. Sherries can be drunk as an aperitif or after dinner. Dry sherries are usually drunk chilled, sweet sherries at room temperature.

Also known as Vinho do Porto, Port is a Portugese fortified wine produced exclusively in the Douro Valley in the northern provinces of Portugal. Port wine is typically richer, sweeter, heavier, & possesses a higher alcohol content that unfortified wines. This is caused by the addition of distilled grape spirits to fortify the wine & halt fermentation before all the sugar is converted to alcohol & results in a wine that is usually around 18-20% alcohol.
