February is the month for sweet romance, so this month's school will focus on sweet champagnes - one of the oldest champagne styles and the original champagne of kings. Sample three different champagnes made with a high "dosage" (addition of sugar - you can do that in Champagne!) and learn about how this oldest of champagne styles is made.
