Our restaurant is chef owned by Francis Solevo. Fran Solevo has had a long career of creating and reproducing many old world Italian dishes. He began his career in the early 70's in Branford, CT opening up Antonio's Restaurant. He later opened the original Antonio's in East Haven(1974 to 1998). This is where he solely created and prepared many of his own recipes which he still uses today. Dishes such as, Veal alla Franco, Shrimp Scamponi and Veal Mediterranean are just a few. In October of 1999, he opened F.J. Soleo's in New Haven. His menu, "Changing of the Season", still consists of many old and new dishes. Minestra, Oxtail soup, Razor clams squash flowers, Rabes with homemade sausage, and Pasta Potone are a select few.
