Fat ptarmigan pizzas are baked about 12-inches round. At 700-750 degrees in an Italian brick oven next to a hardwood fire. Our house-made and hand-tossed dough produces a crispy outside and a soft inside. A slight char on the crust holds the flavor of the woodsmoke and complements our freshly prepared toppings.
