We source our grapes from several first-class vineyards in Washington and Oregon.
Red Willow Vineyard
located in the far western end of the Yakima Valley, is one of the oldest vineyards in the state. The vineyard is owned and operated by the Sauer family. Red Willow Vineyard is our source for Syrah, Merlot, Grenache, Tempranillo, Sangiovese, Cabernet Sauvignon, Cabernet Franc, Malbec, Carmenere, Petite Verdot and Viognier. The Methven Family Vineyard in the Eola-Amity Hills near Dayton
Oregon is the source of our Pinot Gris and Pinot Noir. The vineyard is owned by Allen and Jill Methven and is under the watchful eyes of Greg McClellan and Rob Clarke.
Boushey Vineyards in Grandview, Washington is the source of our Chardonnay.
We are very excited about this new vineyard with four clones of Chardonnay.
The Winery
Throughout the summer we visit the vineyards and talk with the viticulturists about the progress of the grapes and the plans for harvest.
As harvest draws near we are in regular contact, discussing the sugar and acid levels in the grapes. When the decision is made to harvest, we load our harvest bins into a rental truck and head for the vineyards. The grapes are picked for us by the vineyard crew and we hurry home with our raw material.
At the winery we fork lift the picking bins up to the mezzanine where we can hand sort the grapes to ensure that only good clusters fall to the destemmer below.
Stems are removed, the berries are crushed and the grapes fall into a stainless steel vat ready for fermentation.
We inoculate the crushed red grapes the following day with yeast chosen to bring out the varietal characteristics of grapes.
The fermentation generally lasts 7-10 days for the red grapes. Twice a day we punch down the "cap", the skins that are pushed out of the liquid by the carbon dioxide generated during fermentation.
When all the sugar is converted to alcohol, we pump the juice into barrels.
The remaining grape pulp is then transferred to the press to extract the remaining juice. Malolactic bacteria are added to barrels for the secondary fermentation. These bacteria convert the malic acid in the juice to lactic acid. The barrels are kept warm during this period to keep the bacteria working. Secondary fermentation lasts weeks to months.
Once secondary fermentation is finished the wine is transferred out of the barrel
the lees are washed out of the bottom of the barrel, and the wine is returned to the barrel. Potassium metabisulfite is added to the wine and the barrel is moved to barrel room (55°F) for the wine to age. The barrels are sampled and topped monthly.
After a year
we begin experimenting with different blends of wine from the various barrels and grape varieties. When we find the best combination, we blend the wines to prepare for bottling. Bottling generally occurs 20 months after harvest.
White grapes are handled slightly differently.
The grapes are destemmed and transferred immediately to the press where the juice is removed from the pulp. The white grape juice is pumped into tanks to settle. The following day the juice is pumped off the settled lees into another tank for fermentation. The fermentation temperature is controlled to extend the fermentation for 3-4 weeks. When fermentation is complete, the wine is chilled to precipitate out excess tartaric acid. The wine ages in the tanks for several months and is then filtered and bottled.

2011 Barrel Select Cabernet
Our 2011 Red Mountain Cabernet Sauvignon Barrel Select is a blend of 82% Cabernet Sauvignon and 18% Cabernet Franc from Ambassador Vineyard. Deep ruby colored, this wine possesses a classic Cabernet nose of blackberry, cherry, plum, juniper berry, cigar box, eucalyptus and sage. Total production: 224 cases. Alc: 13.8%.

2011 NOAA Corps Centennial
This magnum of Cabernet Sauvignon was bottled in celebration of the 100 year anniversary of the NOAA Corps. The grapes were harvested in 2011 from the Ambassador Vineyard on Red Mountain in Eastern Washington. The wine is available only to current and former NOAA Corps officers.

2012 David's Block
The 2012 Red Willow Vineyard David's Block Bordeaux Field Blend includes all six Bordeaux varieties - 56% Cabernet Sauvignon, 18% Malbec, 10% Cabernet Franc, 7% Merlot, 7% Carmenere, and 2% Petit Verdot. "The aromas offer pleasing complexities of toast, earth, fresh herbs, red and black fruit, flowers and plum. The elegant palate brings a lovely sense of balance, purity, and texture that keeps the attention high straight through the coffee-filled finish" (Wine Enthusiast, 92 points). 2012 Red Willow Merlot
The 2012 Red Willow Vineyard Merlot is a blend of 77% Merlot, 16% Cabernet Sauvignon, 5% Malbec, and 2% Cabernet Franc. This is a bold, structured and still a very smooth Merlot. It has a nose of dried flowers and a finish of chocolate and nutmeg. Total production: 148 cases. Alcohol 14.9%.

2013 Old Salt
Back by popular demand, "Old Salt" is our "Super Tuscan". A blend of 71% Sangiovese, 24% Cabernet Sauvignon, 3% Cabernet Franc, and 2% Malbec the wine has the dried cherry/white pepper nose of Sangiovese with the added body from the Cabernet. Total production: 175 cases. Alc: 14.5%.

2013 Syrah, Eight Clones
Our 2013 Red Willow Syrah 8 Clones is a blend of 94% Syrah, 4% Viognier, and 2% Grenache all from Red Willow Vineyard. The Clonal Block of Red Willow Syrah was planted in 2005 and contains eight different clones of Syrah. Bright, dark red. Smoky aromas of raspberry and meat. Concentrated, sweet and saline, with flavors of red berries, game, chocolate and spices. "...a dazzling sense of purity that carries through the finish" (Wine Enthusiast, 92 points, Editor's Choice). Total production: 366 cases. Alc: 14.4%.

2014 Pinot Noir
Our 2014 Methven Family Vineyard Pinot Noir is a blend of three Pinot Noir clones (Pommard, 667, and 115). The wine is more full bodied than our 2013 vintage as a result of the longer growing season (the rain started later), but still has the earthy bouquet of an Oregon Pinot Noir. Total production: 90 cases. Alcohol 13.5%.

2014 Syrah Eight Clones
Our 2014 Red Willow Vineyard Syrah Eight Clones is very similar to our award winning 2013 vintage (one of Seattle Met's 100 best wines, 92 points Wine Enthusiast, 90 points Wine Spectator, 90 points Robert Parker's Wine Advocate). The eight clones of Syrah were co-fermented with 5% Viognier and 3% Grenache to produce a bright, dark red wine with smoky aromas of raspberry and meat. Total production: 385 cases. Alcohol 14.3%.

2015 Marquette
Our 2015 Marquette is our second vintage of this grape. Marquette is a hybrid developed at the University of Minnesota to survive a Minnesota winter. It was planted in two vineyards in Washington in 2010/2011 to test the varietal for Washington State (our connection is Red Willow Vineyard). In a tasting of Marquette wines from across the country this year, our 2014 came out on top. This hybrid has pinot noir as a grandfather. It has the body of a pinot noir with a more fruitier taste. A perfect picnic wine. Alcohol: 12.6%.

The grapes for our 2016 Pinot Gris were grown in the Methven Family Vineyard in Dayton, Oregon. The wine is dry with a grapefruit bouquet, full mouthfeel and long finish. Total production: 135 cases. Alc: 13.9%.

Officers Club
