Come and experience wines that are thieved right out of the barrel in our sumptuously appointed Venetian Cave.
Taste the difference between wines produced in oak barrels from the great forests of the world: a common example is a side-by-side comparison of a single vineyard cabernet aged in French oak tasted alongside that same cabernet aged in American oak. The Cave Experience includes sampling approximately eight wines in total including bottled selections. After you exit the caves, you will be offered a selection of cheese & house-made salumi, cured by our resident chef Joshua Schwartz, as well as pizza. Bottled wine accompanied by dark chocolate will complete the tasting. Please allow 90 minutes for the experience. The Del Dotto’s have acquired vineyards located in some of the best spots for growing grapes: Rutherford Bench, St. Helena Appellation, Howell Mountain and Sonoma Coast. They currently make Cabernet Sauvignon, Merlot, Cabernet Franc, Sangiovese along with Pinot Noir from the Sonoma Coast and will soon be making Chardonnay as well. They have become the only winery to bottle wines directly out of individual French and American oak barrels. Del Dotto continues to experiment with ancient winemaking techniques with an ultimate goal: To make great wines that will bring people together to enjoy life with family and friends!
