The process begins the afternoon before it ever reaches your table by boiling pork bones & joints in a large cauldren all throughout the night reducing at an un-disclosed location, by the time it reaches the stove behind the counter the next day all the goodness is concentrated in our famous tonkatsu soup base. From the pot the soup goes into bowls (large & half size available upon request) where it is infused w/ our secret blended soy sauce. Into the completed broth we add boiled chijire style egg noodles, the firmness of which can be altered upon request. Finally the kurobuta pork belly chashu. Marinated boiled egg. Bamboo shoots. Bean sprouts, green onions & sprinkle of sesame seeds completes the reason why you’re here & why we are still in business.

It’s hot outside. It’s hot inside. What do you do’ well, we’ve cooled the noodles under running water for you, served the chashu while we were at it. And separated all the other fixings so you don’t have to endure a face full of steaming pork broth to enjoy our signature. However it would be sacreligious to not serve the soup. So we’ve put it to the side as a ‘dipping sauce.’ in japan. Loud slurping isn’t rude. But a reflection of how much you are enjoying the meal.
