My original plan was to become a professional chef. I obtained formal training at California Culinary Academy, but my “real” training took place in my Grand Mom and Mom’s Kitchen. Many of the recipes we use today at Cowgirl Café are from my Great Grand Mom’s trail cooking in Texas and Oklahoma. Our biscuits, gravy and sausage originated from my Grandma Dodd’s “covered wagon” style cooking.
In 1978, I started my own catering company, and over the course of the next fifteen years until 1993 my wife, Meredith and I built “Maddy’s Catering”. We custom catered shows, events, weddings and horse clubs for many years while making great friends who still patronize our Cowgirl Café restaurants today. Meredith and I were very thankful for all the support we received from our family and friends.
