Dry Aged Berkshire Pork Chop*
Locally raised in Lexington Nebraska by TD Niche, we have received some beautiful all-natural Berkshire pork that we have dry aged for 14 days. Each pork chop was aged alongside Himalayan salts to naturally season the loins during the aging process. After being grilled to a medium plus temperature and served over a bed of truffle mashed potatoes. This dish is finished with a bourbon herb cream sauce, and a fried sage leaf on top of red onions caramelized with dry aged flavors.
