Extra Strong Bitter (ESB) brewed with Myrtle leaves-A traditional English style pale ale with a great emphasis on balance between European malts, including spelt, an ancient grain, and Noble hops. Copper in color with caramel sweetness, medium bitterness, and herbal notes from the myrtle. The first beer ever brewed at Chimera named for the indigenous plant used in the brewing process which is common in the lands that once comprised the Roman Empire.
American Pale Ale-An adaptation of the English pale ale style using American ingredients (malt, hops, and yeast). Aggressively hopped for both bitterness and aroma. Golden in color with light malt flavor. Our flagship hoppy ale, this name is a nod to the gun-slinging history of the Wild West.
Irish Red Ale-An Irish slant on the English style "Pub Ale" characterized by it's reddish hue. Created with English malts and hops, with a little roasted barley for color. Toffee-like maltiness with very little hop presence. An easily quaffed pint, this beer was named for Cu Chulainn, a fierce Irish mythological hero. His name translates to English as "Culann's Hound".
Extra Strong Bitter (ESB)-Similar to our Roman Empire, this is a traditional English style pale ale that should exhibit great balance between the European malts and Noble hops. Copper in color with caramel sweetness and low to medium bitterness. The inspiration for this beer was the man himself, Didier Drogba. Though he is gone from Chelsea, he will forever be legend.
Belgian Witbier with coriander seeds-Based on a 400 year old Belgian style comprised of at least 50% unmalted wheat, barley, and Noble hops. Cloudy straw in color with low bitterness. Fruity and dry with a delicate black pepper-like presence. Bianca is the Italian word for white, a reference to the very light color of this beer.
All Green Mink
New England IPA-A relatively new style placing greater emphasis on aroma hopping instead of bitterness. English malt and yeast combined with American hops. Crisp, clean, and dry with slight bitterness. Most of the flavor is driven by copious post-boil hop additions. Blurring the lines of what an IPA can be, we went with this name because all green mink is luxurious...or is it? We'll let you decide.

Stout with the Old, In with the New
American Stout 7.8% ABV - An American version of the Export Stout style made with 2-row, roasted malts, and oats. Black in color with a slight bitterness from the use of American hops, this beer has roasted coffee to dark chocolate flavors. For those that are tired of the same ol' thing time after time, we say Stout With the Old, In With the New!
Texan Brown Bull
Imperial Brown Ale 7.7% ABV - An imperial version of the traditional English Brown Ale, this beer is made with English base malts, roasted malts, and English Ale yeast. Dark brown in color with mild maltiness and low bitterness. Join the herd, pull up a seat, and throw back a glass of this one.
Rum the Jewels
Rum Barrel-Aged Imperial Brown Ale 8% ABV. A blend of Barrel-Aged and young Imperial Brown Ale, this beer is made with English malts, roasted malts, and English ale yeast. Dark brown in color with low bitterness and mild maltiness. Strong rum barrel character from the aging process. Grab a pint and stretch out you sea legs.

We love our neighborhood and are so incredibly excited to share our craft with our neighbors. We have a spot in the community garden where we grow herbs and some other seasonal veggies. It is pretty cool to be able to use some of that stuff to prepare food for our neighbors. We have an amazing staff that is just as beer nerdy as ourselves and they are here waiting for you to come and hang out.
