In keeping with the care and attention paid to the beer aspect of The Cask Republic, Chef Carl Carrion has created a menu that compliments the beer, adding even more warmth and comfort to this unique restaurant. A graduate of the New York Restaurant School, Chef Carrion cut his teeth while cooking at some of New York’s finest kitchens, including Union Pacific under Chef Rocco DiSpirito, and at Patria with Chef Douglas Rodriguez. The move to Connecticut brought him the Chef De Cuisine position at Max Downtown in Hartford and Max Fish in Glastonbury, as well as a stint at Barcelona of South Norwalk before heading up the culinary side at The Cask Republic. The menu is a hybrid of contemporary American fare, with global influences throughout.
