Clearwater Kölsch
IBU: 25, OG: 13, ABV: 5%, Hops: Columbus & Crystal, Malts: Canadian 2-Row & German Vienna. This is the first beer that we have brewed that is not considered an ale. Brewed with imported German yeast, Kolsch is a style of beer that is stuck in between the two main styles of ale and lager, not as fruity as an Ale, and yet not quite as subtle as a Lager; our Kolsch blurs the lines between the two. Food Pairing - This beer is extremely versatile and can be enjoyed with hamburgers and hot dogs as well as oysters on the half shell; to name a few.
Effortless Session IPA
Beer Style: IPA, IBU: 45, OG: 11.5P, ABV: 4.5%, Hops: Cascade, Mosiac, Palisade & Tomahawk, Dry Hopped: Mosiac & Palisade, Malts: 2-Row, Crystal and Carapils. The only thing Effortless about this beer is the way it drinks. Freshchester Pale Ale
Beer Style: Pale Ale, IBU: 35, OG: 13.5P, ABV: 5.5%, Hops: Columbus, Cascade, Palisade, Malts: Domestic 2-row, English Crystal Malt. One of the first beers I brewed after moving out to California to begin my brewing education was a Pale Ale. This version is a true testament to the influences the Wild West had on my early brewing. My Pale Ale is loaded with US-grown Cascade, Palisade, and Columbus hops, so be sure to take a good sniff to enjoy their robust aromas before taking your first sip. Food Pairing - Foods with a spicy kick are a great match, as the bitterness of the hops will help to cool the palate before your next bite. Mexican food and pizza are natural matches
Hop Commander IPA
Beer Style: IPA, IBU: 65, OG: 15.5P, ABV: 6.5%, Hops: Columbus, Centennial, Citra, Bravo, Dry Hopped: Centennial, Citra & Bravo, Malts: Canadian 2-Row. We jumped the gun along the way making our Hop Commander IPA before a base but it worked out for us. Working backwards gave us an incredible profile to work off of to make a very well balanced IPA with a lighter, softer touch than our Imperial version but still packed with hops. Food Pairing - This beer handles well with most foods but spicy is the way to go. Seafood Fra Diavolo, Indian cuisine, or your favorite hot wings.
Liquid Gold
Beer Style: Belgian-Style Ale, IBU: 15, OG: 15.5P, ABV: 6.5%, Hops: Crystal, Columbus, Cascade, Spices: Corriander, Malts: Canadian 2-Row. Don't let the golden colors fool you – this isn't your father's lite beer! Brewed with Premium Malt and US-grown hops, this beer is a full-flavored introduction to craft-brewed beer. We add the hops late in the boil, allowing you to enjoy the flavor and aroma of the hops without an aggressive bitterness. Food Pairing - A great match with fish and chicken, both sautéed and grilled, especially with citrus and herbs preparations. Shellfish steamed in Liquid Gold is a match made in beer heaven.

Meltwater Ipl, Spring
Beer Style: Indian Pale Lager, IBU: 45, OG: 14.5P, ABV: 5.9%, Hops: Cascade & Mosaic Hops, Dry Hopped: Cascade & Mosaic Hops, Malts: 2-Row, Vienna & Munich. A lager at heart, malty, crisp and refreshing, with a hoppy aroma that you would expect from an India Pale Ale. This beer is a hybrid that takes two very different styles, Pilsner and IPA, and mashes them up into a unique, highly-drinkable beer.
Sun Block, Summer
Beer Style: Summer IPA, IBU: 30, OG: 13P, ABV: 5%, Hops: Columbus, Cascade, Palisade, Sorachi Ace, Dry Hopped: Sorachi Ace. As the sun starts to peek out from around the dark winter clouds, it is a clear reminder that brighter days lie ahead. Deviating from the original recipe, this new and improved Sun Block comes with a little more oomph in flavor, but still has that great summertime body. Food Pairing - Think seafood, raw bar, and it is really great with chicken dishes.
Autumn Blaze Pumpkin Ale, Fall
Beer Style: Pumpkin Ale, IBU: 20, OG: 13P, ABV: 5%, Hops: Columbus & Crystal, Spices: Nutmeg, Allspice & Cinnamon, Malts: Canadian 2-Row & German Vienna. This is the perfect beer to drink as the weather starts to turn a bit cooler. Brewed with pureed pumpkins added directly to the mash, and traditional pumpkin pie spices add to the end of the boil, this beer packs a ton of flavor into a malty and smooth amber colored ale. Food Pairing - The perfect match with Thanksgiving dinner and a fat piece of NY Cheesecake.
Winter Ale, Winter
Beer Style: Spiced Ale, IBU: 35, OG: 15P, ABV: 6%, Hops: Columbus & Goldings, Spices: Secret Blend, Malts: Canadian 2-Row, Belgian Crystal, Pale Chocolate. The one thing we all need on a dark winter night is a beer to help us forget about the cold and remind us that the sunny days lie ahead. Not too dark, but evenly brewed with spices and malts, making it a solid winter warmer. Food Pairing - This lovely spiced ale would pair well with rich roasty meats, beef stew, and goes great with Shepard's Pie.
Smoked Porter
Beer Style: Porter, IBU: 45, OG: 16.5P, ABV: 6%, Hops: Goldings, Columbus, Malts: Canadian 2-Row, German Smoke Malt, German Munich Malt, German Vienna Malt, English Chocolate Malt, English Roasted Barley. A complex beer, with layers of flavors unfolding as this beer slides down your through. Before the introduction of indirect-fired malt kilns, all beers had a smoky flavor. Today only a handful of brewers produce beer reminiscent of those of the past. We use imported German smoked malt to add depth and complexity to our Smoked Porter. Food Pairing - A natural match for any smoked or grilled meats. The smoky flavor of the meat and the unique smoky flavor of the beer blend beautifully to elevate the enjoyment of them both.
Brown Bird Ale
Beer Style: Brown Ale, IBU: 20, OG: 13P, ABV: 5%, Hops: Columbus & Goldings, Malts: Canadian Pale, English Crystal, German Munich, German Roast. Named after the little birds that fly by the brewery looking for grain after the weather turns cold, this was originally to be a Fall/Winter seasonal. Clearly, we underestimated the market for this smooth and malty brown ale, and we have decided to keep it for year round enjoyment. Food Pairing - The rich malt backbone of this beer calls out for roasted meats and rich cheeses.
Captain's Reserve
Breweries have their usual suspects and then they have what they would put in their own reserve pile. These specialty brews are uniquely brewed and they not only come in with intense aromas and flavors, but deceptively high octane alcohol. Well rounded to showcase every ounce of flavor for you to drink now or stock pile away for a special day.
Frost Monster Imperial Stout

Golden Delicious
Beer Style: Tripel, IBU: 35, OG: 20P, ABV: 10%, Hops: Simcoe, Cascade, Amarillo, Malts: Canadian 2-Row. There's nothing quite like Mom's apple pie… But I am willing to bet this beer is pretty darn close. An American Tripel, dry-hoped with Amarillo hop and aged in Apple Brandy barrels from one of this country's oldest distilleries. The tropical aroma of the hops and the delicate apple aroma from the barrels are a perfect match. Straight from the Captain's cellar to yours, we hope you enjoy. Food Pairing - This beer should be enjoyed as either an aperitif or an after dinner drink on its own, but a slice of apple pie would work just as well.
Nor'easter
Beer Style: Strong Dark Ale, IBU: 32, OG: 25P,ABV: 12%, Hops: Simcoe, East Kent Goldings, Malts: Pale, Chocolate, Munich, Special B, Roasted. This is a truly unique brew, combining some unusual elements to create a powerful, yet flavorful brew. I brewed a similar beer to this one back in 1998, while I was home brewing out in California. Only this time around, I decided to age it in bourbon barrels to add a new element to the already rich sensory profile. The combination of dark malt, elderberries and bourbon barrels makes for an interesting tasting experience. This is a sippin' beer, so sit back by the fire and enjoy. 12% alcohol by volume. Food Pairing - Chocolate is about the best thing to pair with this one. It can easily stand on its own as a night cap, but if you get hungry try it with some chocolate truffles.
Palate Shifter Imperial IPA

Seeking Alpha Triple IPA

These beers are based on years of patience and trial and error. Each version takes from a different stock of our oak cellar, is carefully blended and uniquely tart. We have tried to create each version to highlight the elements you can express by different recipes with sours ales – malty, roasty, hoppy, tart, ect. Try them side by side to run the gamut of flavors.

Born on Castleton St, our original home, these beers represent the beginnings of what was to come. From our first days as a brewery we immediately began aging beers in oak, experimenting with difference ingredients and pushing the boundaries of what brewing could be. Unapologetically sour, complex and challenging, these are our original sour ales.
Curvee De Castleton
Grapes: Muscat, ABV: 7%+, Malts: 2-Row. This is a beer that will make you rethink your definition of beer. It doesn't taste like any beer you've ever had, yet it doesn't taste like anything else either. Pushing the limits of brewing is what makes this job so much fun. Malted barley, wild yeast, hand picked Muscat Grapes, and French oak wine barrels are just a few of the things that wen into crafting this beer. Breathe deep, take a long sip, and enjoy the creation in your hand. Food Pairing - I would recommend using this beer as you would champagne. Enjoy it with oysters and clams on the half shell. Raw scallops are also a great match.
Flaming Fury Peach Sour
Beer Style: Sour Ale with Fruit | Barrel Aged, IBU: 15, OG: TBA, ABV: 6.5%, Hops: Crystal, Aged: 40HL Oak Tanks, Malts: 2-Row & Wheat. Created by blending our Sour Golden Ale with ripe and juicy Hudson Valley peaches. Aged in French oak foundres until the tart flavors of the beer and the sweet flavors of the peaches meld into one. Enjoy on a hot Summer day with a peach in hand.
Hops N' Roses
This golden ale was aged in oak barrels with Brettanomyces and a few choice flowers to give it a complex and floral aroma. Tart, tangy and full of flavor. Straight from the Captain's cellar to yours, we hope you enjoy. Food Pairing - Goes very well with seafood prepared lightly like salmon or tuna. Also goes great with chocolate.
Rosso E Marrone
Grapes: Merlot & Zinfandel, Oak Barrels: French & American. Red wine grapes mixed with sour brown ale to create this truly unique sensory experience. Aged in oak barrels with Brettanomyces to help marry the flavors and impart a distinct sour character found nowhere else. Rich, vinous, tart and tangy are the flavors of this classic American Sour Ale. Food Pairing - Dark Chocolate dessert or stinky blue cheese.

Captain Lawrence Barrel Select Gold, Sour Ale / Wild Ale · 7.0%
Golden Ale aged in barrels that once housed Cuvee de Castleton. All the fruit was removed from the barrel, it was given a brief hot water rinse and then filled back up. Aged for close to a year. Brettanonmyces was the only souring yeast/bacteria used. ABV around 7% based off the OG and FG of the beer.

One of the first beers I brewed after moving out to California to begin my brewing education was a Pale Ale. This version is a true testament to the influences the Wild West had on my early brewing. My Pale Ale is loaded with US-grown Cascade, Crystal, and Columbus hops, so be sure to take a good sniff to enjoy their robust aromas before taking your first sip. Sensory Profile: An aromatic beer with notes of citrus, pine, a noticeable bitterness, and a touch of malty backbone to help balance it out. Captain Lawrence Smoked From The Oak (Wine Barrel) 6.4%
The marriage of beer and oak is a truly wonderful thing. Just like wine, whiskey or rum, beer can also gain in complexity when aged in oak barrels. But if you take it one step further and age the beer in oak barrels that had previously held word class wine, well then you can elevate the experience even higher. This is our Smoked Porter, aged in French oak barrels that were previously used to age Merlot and Pinot Noir. We let the beer age in the barrels for around 12 months before adding a fresh dose of yeast to allow the beer to naturally carbonate in the bottle.

This is a truly unique brew, combining some unusual elements to create a powerful, yet flavorful brew. I brewed a similar beer to this one back in 1998, while I was home brewing out in California. Only this time around I decided to age it in bourbon barrels to add a new element to the already rich sensory profile. The combination of dark malt, elderberries and bourbon barrels makes for an interesting tasting experience. This is a sippin' beer, so sit back by the fire and enjoy.
