About Us
The name evokes the colors and sights of the Caribbean. Even a variety of island music but more importantly, Calypso was Atlas' daughter. Atlas, you know of Greek god fame...the man with the weight of the world upon his shoulders. So what of the mythical Calypso? What did she do? She was the queen of the nether-world. Now enter the picture, Odysseus. Yes Odysseus of the Iliad and Odyssey fame. While on his epic journey, he became shipwrecked in the nether world. Starving and wandering his crew came upon the cattle of the sun god (Zeus). The men with the exception of Odysseus ate the cattle. Zeus struck them down. Now alone, wandering, and starving he was near death. Calypso discovered him, fed him and nursed him back to health. Calypso offered him eternal life if he would stay with her. Instead, he chose to return to his wife and son...a mere mortal. Anyway, if it was good enough for Jacques Cousteau...it was good enough for us.
To give you the very best of what's available. To nourish you. To rescue you from the same old frozen, processed foods. We use superior products. Our ingredients are fresh, local, and often organic. Our shrimp are Extra Jumbo 16-20 ct, our conch is farm raised from the Turks and Caicos and hand pounded daily, our flour is unbleached and Unbrominated, we use real butter not "buttery blend", we fry in 100% Pure Peanut Oil at 5 times the cost of your standard vegetable oil, full of added detergents. It get's very tiresome hearing complaints about the paper and plasticwear we use. We are licensed as SINGLE SERVICE WEAR! That ladies and gentlemen is a polite way to say THROW AWAY!!!! Yes, throw away will always be wasteful. But these rules are out of our hands. People suggest something other than the styrofoam. Unfortunately that is the only "throw away" substance that can support the weight of our portions. We at Calypso's have always found, it is infinitely more important what's on your plate... than quality of the plate itself.
