the doge blu is a blend composed of 80% arabica beans from brazil, colombia, el salvador, guatemala, panama, ethiopia and india, which has undergone decaffeination by the demus company in trieste. italy (www.demus.com).the decaffeination process utilizes dichloromethane, a solvent particularly effective in the extraction of caffeine. furthermore, the easy removal of the dichloromethane from the coffees assures that the roasted coffee does not contain any chemical residual as a result of the decaffeination process. the finished product is a coffee that is 97% caffeine-free
