The roastery is an integral part of the cafe, so customers can gain a unique perspective on the roasting process and watch as we hand-roast small batches of specialty-grade coffee on a restored vintage Probat.
We utilize a catalytic oxidizer to reduce emissions from the roasting process and at the same time, use less gas. We also recycle coffee chaff and compost coffee waste.
We work together to select high quality green beans from socially and environmentally responsible farms, co-ops, producers and importers. We then spend time developing roast profiles to bring out the dynamic nuances in the beans. After roasting, we cup every batch separately to assure consistent quality.
