Sabro Fresh Hop IPA - New England 6.5% ABV 45 IBU Crux Fermentation Project, Bend, OR
With so many of our locally grown hop species originating overseas, it's not every day we get to craft a true American original like this hazy IPA. Freshly harvested, this fully unfiltered expression of the Sabro hop - a unique variety bred from a wild hop native to the mountains of New Mexico - explodes with flavors of coconut, tangerine, and tropical fruit with a hint of cedar and creamy mouthfeel that's anything but bitter. Stay wild!
Øl School IPA - American 6.5% ABV Little Beast Brewing, Portland, OR
A West Coast IPA fermented with Kveik yeast, Mosaic hops, and Callista hops. Kveik is a Norwegian slang word for yeast, and refers to the strains capable of producing clean beers at high temperatures with little to no funky/medicinal aromas or hot and harsh alcohols that other ale yeasts typically produce. So this showcases the fruity papaya, melon, and stone fruit notes of these particular hop varieties. With a beer like this, you get to taste the pure essence of the hops. This is definitely unique and on the rarer side of an experimental style and not going to be like an American IPA. ØL translates to "beer"

The city of Cologne on the Rhine river in western Germany is renowned for its "Kölsch" beer. Although it utilizes a top-fermenting ale yeast, Kölsch is fermented relatively cold and further cold-conditioned. The purity law of 1516 outlaws using any wheat in lager beer, but since it's an ale, Kölsch uses up to 20%. It ends up being very clear and yellow, with a slightly fruity aroma, and a sharp crispness

Snörkel, Farmhouse Ale - Saison 4.2% ABV Jester King Brewery, Austin, TX
Snörkel — a farmhouse ale brewed with alderwood smoked sea salt and oyster mushrooms grown by our neighbor Logro Farms. Logro Farms is located just a few hundred yards from Jester King Brewery at Ceres Park Ranch. Snörkel takes partial inspiration from traditional German Gose. Like Gose, it's moderate in alcohol, brewed with malted wheat and salt, and has some acidity or sourness in the flavor profile. We specifically used both sea salt and alderwood smoked sea salt, and fermented Snörkel (like all our beer) with a blend of brewers yeast, naturally occurring wild yeast, and native souring bacteria, the last of which lends the beer its acidity. But Gose only served as a jumping off point. From there, we set out to explore the savory characteristics of umami through use of the oyster mushrooms
