Decaf Ethiopia Sidama - Kenebata Natural
This delicious decaf comes from a variety of dry-mill processing stations throughout the Sidama region. The coffee is sent to a decaf processing plant in Germany, where it is decaffeinated using the Methyl-Chloride method. The green coffee is steamed, which brings a majority of the caffeine to the surface of the bean. The Methyl-Chloride solvent is then applied, which absorbs a majority of the bean’s caffeine. This process decaffeinates the coffee while preserving the delicate oils, which give the coffee its flavor. This process of decaffeination can sound frightening to the consumer. Often, an alternative method of Swiss Water Processing (SWP) is sold as a more health friendly option. In fact, SWP uses an almost identical (albeit organic) chemical known as Ethyl Acetate to absorb caffeine. The results of both processes leave TRACE AMOUNTS of the respective chemicals upon completion. This level is SEVERAL HUNDRED TIMES less that what the FDA deems appropriate for human consumption. Additionally, the result of the Methyl-Chloride process is much often a tastier cup with no health risks to the consumer. So relax, kick back and enjoy!

Organic Honduras Beneficio Santa Rosa
Beneficio Santa Rosa, which collected this coffee from a number of small co-ops, won the Honduran Presidential Award for exporters in 2013. This award recognizes the mill's contribution to the livelihood of farmers in western Honduras, and its commitment to innovation in coffee processing. This organic lot, from farms throughout the western regions of Copan and Ocotepeque, brings a complex and inviting interplay of sweet and savory flavors.

Fazenda Aurea is a medium-sized farm, known for producing semi-washed (pulp process) and natural process coffees. Another unique feature of Fazenda Aurea is its raised drying beds -- while common in Africa, these raised beds, which provide even drying by allowing air to circulate under the beans, are not often found in Latin America.

Papua New Guinea Kimel Estate Peaberry
This peaberry lot presents an incredibly balanced cup profile--crisp fruit notes develop into a creamy, buttery finish that is highlighted by a pleasant praline note. In addition to producing delicious coffee, the Kimel Estate is a model of a socially- and ecologically-responsible farm: the estate is owned and worked by indigenous peoples (primarily the Opais tribe). The farm provides clean water, housing, and education for workers and their children, grows its coffee under shade trees, and has implemented recycling programs for the coffee pulp and the water used in the de-pulping process.

Ethiopia Kochere
This coffee hails from the Kochere region, nestled in the middle of southern Ethiopia, near the town of Yirgacheffe. The Kochere micro-region has long been known as one of the best origins for fully washed southern Ethiopian coffee. The combination of very high altitude and iron-rich, acidic soil creates the ideal growing situation to produce a distinctly delicious coffee.

Ethiopia Natural Yirgacheffe Aricha
In Ethiopia, the export of all coffee is controlled by the centralized export system (ECX). The centralized system can make it hard to learn specifics about Ethiopian coffees, but this coffee is categorized as a "grade one." In addition to being a mark of high quality, grade one coffees maintain more transparency through the supply chain, allowing us to present this excellent natural process coffee not only as a Yirgacheffe, but as a product of the Aricha washing station within Yirgacheffe.

We received a lot of mind-blowing submissions but "Campfire Coffee" really stood out. This blend features Caturra, Typica and Bourbon varietals and has approachable flavors of Cherry, Dark Chocolate and Peach.
