At BBQ by Jim, we pick the very best cuts of meats and ingredients, we never get in a hurry, and we know from experience how things need to be done to cook the best barbecue around. That's the beginning, but of course there are other keys to a great barbecue operation - if you want to bring out the right taste so customers will come back over and over again. At BBQ by Jim we cook only Boston Butts (the front shoulders - for pulled pork) and for ribs it's what butchers call the St. Louis style - where the meat is thick and well marbled. We remove the brisket bone so it cooks up better than a spare rib.
