Manasapa
Aromas of amaretti with smooth flavors of milk chocolate, nougat and caramelized shortbread with plush flavors of strawberry and plum. Equally wonderful as a drip coffee, press pot or as a ristretto single origin espresso or combined with steamed milk in a latte. Juan Cristóbal Cruz is a member of the coffee growers cooperative called Cafe Organico de Marcala South America, or COMSA, located in and around the city of Marcala. Marcala is on the southwestern border of Honduras, very close to the border of El Salvador. COMSA is currently comprised of over 300 members.

Los Tuneles
Pungent aromatics, flavors of bakers chocolate, blackstrap and malt with a unique caraway spice note. Remarkable balance. Lively tang builds on finish. Juan David Chavez is the president of the coffee growers cooperative know as Cafe Organico de Marcala South America, or COMSA, located in and around the city of Marcala. Marcala is on the southwestern border of Honduras, very close to the border of El Salvador. COMSA is currently comprised of over 300 members. Don David has produced yet another outstanding COMSA micro lot this year. This is the second time we have chosen to spotlight his coffee. And this year we are featuring two COMSA micro lots. The other is a medium roast called Manasapa, produced by Juan Cristóbal Cruz in nearby Intibuca. Despite their geographic proximity, each micro lot is distinctive. We hope you will enjoy them both. This coffee has been grown without the use of pesticides, herbicides or synthetic fertilizers. Certified at origin by BioLatina.

Lycello
Lavender, foxy grape, shortbread, fir, paprika. Delicate. This Lycello is a very subtle, body forward incarnation of the Gesha varietal. It's clean character in the cup are homage to this varietal being propagated in not only the right habitat, but being wet processed and sorted in all of the right ways. It's Ethiopian roots read so beautifully through its naturalization to Panamanian terroir. The 2014 Lycello represents the fourth harvest from what will be the largest Gesha varietal farm in the world, the Ninety Plus Gesha Estates.

Aceh
Bener Meriah, Sumatra Produced by Gayo Linge Co-op Syrupy body, black cherry, chocolate. Syrupy body and low acidity with chocolate, black cherry and subtle earthy flavors. This coffee is grown by members of the Gayo Linge Organic Coffee Cooperative in the highlands of the Aceh Province in Northern Sumatra. Gayo Linge is a relatively new cooperative that was formed in August of 2008. This year, the Cooperative was comprised of 2274 members that each typically cultivate several acre farms throughout 30 villages. All of their coffee is shade grown and is produced without the use of pesticides, herbicides, synthetic fertilizers. Companion planting with vegetables, fruit and palm sugar is the norm. Once picked, the seeds are Wet Hulled during their preparation and are then sun-dried and carefully hand picked before export. Wet Hulled process coffee is slightly cleaner than its natural process cousin, as it involves a soaking stage in water prior to being stripped of its hull. The coffee retains an exotic Indonesian character. Because of its wonderfully syrupy body, this coffee is a great choice for those who enjoy their coffee with milk or cream even at our light roast treatment.

French
Our French Roast is smooth, rich and seductive with a dark chocolate finish. We have purchased this coffee direct from the Vargas family farm through the Coffee Source since 1996. Don Rodrigo Vargas represents the fourth generation from the Vargas family to produce coffee at Doka and he currently oversees all of the Doka production. The farm is located from 4,430-4,790 feet in altitude and is right next to the Poas Volcano in Sabanilla de Alajuela. The Poas Volcano is the largest volcanic crater in the world. This coffee has won our hearts for many years. In addition, it has been recognized at the Sinter Café Cupping Competition as the First Place Winner in 2000. Gold
We carefully roast and blend this coffee to bring out the finest qualities of espresso coffeesweet caramel, chocolate, spice and hints of dried fruit. When properly extracted it yields spectacular crema and a long smooth finish. To attain this perfection, we source coffees that are naturally very low in acidity and extraordinarily high in body. When the otherwise subtle and delicate flavors of these coffees are concentrated through the high pressure extraction of an espresso machine the qualities are magnified to an essential level. Our proprietary blend includes aged and conditioned coffees from Asia and South America.

Kochere
Honey and flowers, juicy clementine, bergamot. This beautiful, washed Yirgacheffe was prepared at the Alemu Washing Station in the Mendero Mountains just to the south of Sidama. Alemu is one of several coffee preparation stations that is a part of the Kochere Coffee Cooperative, comprised of approximately 500 farmers. We are big fans of coffee from the Kochere Cooperative as the care and pride the members take in the cultivation and preparation of their coffees shows beautifully in the cup, year in and out.

Ripe cherry and chocolate tones with a velvety smooth finish. This coffee is super versatile and drinks well in a broad variety of brewing methods, either black or with milk. The name "Vienna" is a nod to the medium roast precedent established by the great cafes in Vienna, Austria.

Each worker in the Union is paid on a work-share basis, rather than by farm yield.
