Traditional Peruvian food is a blend of our three geographic regions-seafood from Pacific Coast; vegetables, meats and cheeses from the Andes; and tropical influences from Amazon region. Peruvian cuisine is a fusion of not only our geographic regions, but the native Inca and Aymara traditions, combined with cooking practices brought by European, African and Asian immigrants. A wide array of seafood, meats, grains, tubers and seasoning is used to create subtle flavors infrequently encountered in other cuisines.
