Colombia, Tangara, Anaerobic Natural
What does anaerobic mean and how does it relate to coffee? By definition, anaerobic simply means requiring the absence of oxygen. Much of the fermentation process within a coffee cherry is already oxygen free, however, anaerobic fermentation relates to the environment around the coffee fruit also being without oxygen. Merely hours after being picked these coffee cherries are loaded into 50 gallon metal drums and sealed with only a small valve for carbon dioxide (the byproduct of the fermentation process) to escape without allowing oxygen to be introduced. By taking oxygen out of the equation, we' re able to slow down the process and allow for a wider spectrum of flavors to develop. For a culinary comparison, it's similar to making sauerkraut or kimchi! Different from a washed fermentation that can span 12-24 hours, this anaerobic fermentation was active for 90 hours. The final product results in a level of deep complexity and heightened sweetness. We know you'll appreciate the extra time and attention taken to produce this unique coffee! Black Apple Espresso
Airship's flagship espresso blend is named after the award winning Arkansas black apple. The apple variety was discovered in the 1870s in the brathwaite orchard along black apple creek just about a mile north of airship's coffee bar in downtown bentonville. It was propagated in the brathwaite nursery, then commercialized and went on to win first place at an exhibition in paris france in 1900 and then in 1904, took first place at the world's fair in St. Louis. By 1919 northwest Arkansas was producing more than 5 million bushels of apples per year and the industry was the largest employer in the region. But Southern apple mania, as it was called, didn't last long. Due to pressures from insect pests, namely the coddling moth, by the 1940s the majority of apple orchards had moved to different areas of the country. As we cultivate community around coffee, we offer a nod to the history of our local farmers. Blend components: this is a 3-part blend composed of a semi-washed coffee from el salvador, a honey processed coffee from sumatra and a sun-dried natural from ethiopia. This combination makes for a juicy, sweet, complex, yet balanced espresso on its own or the perfect base for a cortado.

Sumatra, Kerinci Honey
This coffee once again challenges our perception of sumatran coffee. The honey process takes the clean sweet coffee we have come to expect from the slopes of mount kerinci and adds subtle fruity and floral notes. We enjoy it as filter coffee but it also makes amazing espresso.
