Welcome to Abiquiu Cafe, Chicago's place for traditional smothered New Mexico-inspired cuisine and authentic Southwest specialty dishes.
Where to begin? I suppose the best place to begin is by noting that New Mexico is the only state in the union with an official state question: "Red, or Green?". People from New Mexico (and, by extension, Colorado), know that this means "would you like your entree smothered in red sauce or green sauce?". The fact that the New Mexico state legislature has enshrined "Red or Green?" in the official compendium of state statutes shows the importance of the chile and chile sauce to New Mexican cuisine.
Abiquiu Cafe is all about chiles and chile sauce. When we say we serve traditional New Mexican cuisine, we mean that we smother our food in chile sauce (customer's choice of red or green or both "Christmas style"). We don't drizzle the food with chile sauce, we SMOTHER it. When we say we serve authentic New Mexican cuisine, we mean that we roast our chiles in-house and create our own sauce several times each week. We don't use canned chiles or pre-made chile sauce. We have our own recipes, which have been perfected by trial and error over the course of many years . We hope that you, our guests, will enjoy the rich smokey flavor of our mild and hot chile sauces. Please feel free to share your comments and suggestions regarding our sauces. We are never averse to improvement. Our chile sauce recipes have evolved over time and will likely continue to evolve as we experience new combinations of herbs & spices.
