Proudly taking our name after what was known as an spontaneous and intellectual meeting called
"Cabildo Abierto" in Buenos Aires, between May 22nd and May 25th, in the year 1810. The meeting came
under strong pressure from the militias & crowd formed in front of the Cabildo. This large group of middle
to upper class citizens favored the stance of a local politicians, and the Cabildo ended up creating the Primera
Junta or First Assembly. The first form of local goverment in the territory that would later became Argentina.
Spain would never recover it’s dominion over our territory. Every May 25Th we celebrate by preparing
traditional "criollo" dishes, and it's fair to say that our whole country stops to commemorate one of our most
patriotic holidays.
